Roasted Purple Cauliflower Florets

Searching for super simple delicious meals? We got you covered. This side dish is incredibly simple and tasty (and beautiful). When you have a really good sauce, make the best of it with veggies. This ginger sauce pairs perfectly with the neutral nutty flavor of cauliflower, tender on the inside and crispy on the outside. Plus you will get tons of nutrients and energy. 1 head purple cauliflower cut into small florets (or white)

1 tablespoon ginger peanut sauce (we use @the_ginger_people it is amazing!)

Extra Virgin Olive Oil “EVOO”

¼ golden raisins

¼ toasted sliced almonds

Freshly ground black pepper

Himalayan pink salt


Choose your cooking method first. We usually use an air fryer since it is quicker, setting it at 390 for 8-10 minutes, watching closely. If not you can perfectly roast your veggies. Preheat oven 400°F. Spray coconut oil to a baking sheet. In a mixing bowl place cauliflower florets and drizzle a bit of EVOO, pink salt and pepper, stir well to coat evenly. Place cauliflowers on the baking sheet and roast for 15 minutes. Turn them over and roast for another 15 minutes, or until tender. Serve and drizzle the ginger peanut sauce, sprinkling raisins, and almonds on top. Some fresh lemon zest to finish is delicious too! Enjoy!
