Super Simple Cauliflower Soup

Meal planning must have: Only 3-ingredients super simple delicious Cauliflower Soup. Vegan or vegetarian, gluten free, low carb, healthy & light.
INGREDIENTS: Serves 4
1 Cauliflower head ’EVOO’ Extra virgin olive oil Chopped onions, garlic, and cilantro, pink Himalayan salt & pepper, for flavoring. Toppings: sliced radish, pine nuts, chia seeds, cheese crumbles if you like.
METHOD: Remove leaves and tough core from the cauliflower and chop into small florets. Carefully clean them. In a medium saucepan, bring 4 cups of water to a boil. Add some chopped onions, garlic and cilantro for flavoring and salt. Stir in the cauliflower florets and cook for 10 minutes until soft and tender. Transfer only cauliflower florets into a blender and add the vegetable broth carefully and blend until smooth. Don’t overdo the water; texture should be thick and creamy. Add freshly ground black pepper, extra virgin olive oil ‘EVOO’ and Maldon sea salt on top if desired. Serve soup hot. Store leftovers in the fridge for 2 days.
